The staples of this diet seem to just be fish, olive oil, nuts, olives, thyme, mint, eggs, bell peppers, kosher salt, etc. Nothing too out there or expensive except for the cost of the fish I th
Great cookbook with great photos and recipes! I was thinking it would have been great to just have 30 minute meals with 5 ingredients or less, but a lot of the recipes included do have that, you just have to dig around. Also, I love that the book tells you up front if something is gluten, nut, etc. free. The staples of this diet seem to just be fish, olive oil, nuts, olives, thyme, mint, eggs, bell peppers, kosher salt, etc. Nothing too out there or expensive except for the cost of the fish I think.

There are 11 sections that cover everything from Breakfast, to Salads and Soups, Vegetable Main Dishes, Meats, Desserts, and so much more. Each food section hi If you have heard anything about the Mediterranean eating lifestyle and are curious to learn more, this is a great resource. After a chapter that discusses health benefits, the Mediterranean food pyramid, guiding principles and stocking the kitchen with pantry and fresh ingredients, basic tools are covered and then it is on to the recipes.
There are 11 sections that cover everything from Breakfast, to Salads and Soups, Vegetable Main Dishes, Meats, Desserts, and so much more. Each food section highlights 10-12 different recipes, so there are many, many choices. Each recipe also has nutritional information, as well as preparation and cook times, and either an ingredient or preparation tip. There is a picture of one recipe from each section, and though I personally would have liked more, this seems to be a trend with several of the cookbooks I have recently read(I am assuming it must be related the cost of printing/shipping/etc.).
So, on to the recipes. I have to say honestly I am not a lover of fish, but I do enjoy seafood and made the Orange and Garlic Shrimp. 8 ingredients, 20 minutes of preparation and 10 minutes to cook. Very tasty and I will be trying the ingredient tip and using lime zest instead of orange zest next time.
Baked Ricotta and Pears was a surprisingly good recipe from the Breakfast section. I like pears, but I never gave much thought to serve them any other way than "here's a pear".This was creamy and warm and a really good addition to Sunday brunch.
With the holidays approaching, I decided to try the Honey-Cherry Walnut Brownies since my father who doesn't really believe in healthy eating(IE the Golden Arches know his name) is slow to adapt to any type of food change. These were lighter with less sugar and I took them over to his house as a Halloween treat and he loved them as much as his store-bought brownies. I will make them again for the holidays as well as many more of these delicious sounding recipes.
A really nice addition to my cookbook shelf.
I received an ARC from Rockridge Press through Callisto Publisher's Club. ...more

As advertised, the recipes are quick to make. Most seem to use ingredients that I would have already around my house (plain yogurt, lemon, the usual veggies, chickpeas, vinegars, honey). I would, however, need to purchase fresh herbs (parsley, basil). They just don't keep well in the refrigerator, so I get them on an as needed basis.
The sticker on the cover promises "101 Easy, Flavorful Recipes for Lifelong Health".
I saw this cookbook on Kindle Unlimited and, since I'm a member, I took a look.As advertised, the recipes are quick to make. The sticker on the cover promises "101 Easy, Flavorful Recipes for Lifelong Health". It is authored by 2 RDNs (Registered Dietician Nutritionists-I had to look it up too!). The cookbook is divided into 12 sections: Breakfast, Snacks, Soups and Salads, Beans and Rice and Grains, Sandwiches and Wraps, Pizza and Pasta, Fish and Seafood, Vegetable Main Dishes, Chicken, Meat and Desserts. For newbies (or someone like me, who seems to be memory challenged these days), the book even offers a conversion table.
My only complaint is that not every recipe has a photo to go with it. However, I liked the cookbook enough that I bought a copy for myself and am thinking of giving one to my 30 y/o. Here's to healthier cooking with new, fresher recipes. ⭐️⭐️⭐️⭐️⭐️

I found several recipes to try. Several that I will make substitutions to ingredients. The recipes do not have ingredients that are readily available in your pantry if you are new to the Mediterranean diet. Or otherwise. I don't like to buy products that I will only use 1 teaspoon or tablespoon. The fact that there are not any photos of the recipes does not bother me. You can imagine how lovely the meals look!!

After reading through this cookbook, I have marked over a dozen recipes I want to try. I admit I have not tried any of them yet, but I appreciate the time the authors took to make sure meals could come together quickly. While I love cooking, I have such a busy lifestyle, I need something that is healthy and fast.

Tons, I mean tons, of great recipes!! Delicious. Great explanation of Mediterranean lifestyle/diet too. Would recommend this book for beginners and those experienced in the Mediterranean lifestyle too.

Recipes are not complicated and taste great. It gives a good general overview of the Mediterranean Diet. We made many of the recipes and enjoyed them.

I just enjoyed going through the recipes in this book. Some yummy looking recipes. I am sure I will try most of the recipes soon.

Great recipes that will be great for you. Eat more veggies! Can't wait to make these more often. Thank you!

All the recipes were easy and could be prepared by a home cook. The recipes jump off the page as just good food that happens to be healthy.
